I think the biggest thing you left out - although showed it - is food prep. Have your stuff ready to go. Once cooking starts you don't want to go rummage around the pantry to find that garlic powder or some other ingredient. Go to a Dollar Store (or whatever equivalent your country has) and buy yourself a whole lot of small bowls. Prep your ingredients into those bowls ready to go (most people have a dishwasher, so the extra dishes are not much of a problem). This not only saves you time but also allows you to cook and not run for ingredients while something is burning or boiling over. Tip: leave a towel or something over the handle when it's just out of the oven. I've burned my hand several times before I started leaving a folded towel over the handle - that will remind you that it's hot and avoid burning your hand. Of course, you could just get used to always handle any handle with a towel and be good, but chances are nobody in a home kitchen does that.

Seriously, this isn't anything about Chicken Brayani! As a trained Chef in Asian Cuisine, I personally find it as an insult. If you want to cook, cook it right (ingredients and method) and take all the time to make it perfect. Never rush in cooking process. Maybe this is a kind of British humour? Add curry powder into food doesn't make it as Indian cuisine.

  • Uwe Schroeder

    Uwe Schroeder

    5 个月 前

So please explain what the insult is. There are hundreds of versions of this dish in India alone and chances are it's not even a Indian dish, but originated in Persia. The "method" as the name insinuates means you cook the protein separately from the rest and combine for a final cooking time. They did that. I don't see a need to be insulted - do you have any idea how much German, French or Italian cuisine is mistreated in the world -- or any other countries dishes at that? Heck, people call a rice dish with saffron and seafood a paella where a lot of people from the Valencia region of spain should rightfully be insulted because paella does not contain seafood "traditionally". By the end of the day, this video was not about the dish in the first place, but about how to work more efficiently in the kitchen. As a trained chef you should know that chefs take shortcuts because no customer waits for 3 hours because you don't want to rush it. Grandma can do that, professional chefs can't.

I don't think that's British - they simply have no plumbing in their studio kitchen. That sink probably empties into a bucket. I would rinse the soap off - actually I'd just stick it in the dishwasher.

To all the people asking why Ben washed the dishes the way he did: Its a fake sink. The faucet is fake and the drain is fake. If he dumps water down that drain they’ll get water all over the floor. This happened in one of their videos when Jamie *accidentally* poured water down the sink (Ben’s reaction is hilarious). cnboth.info/dron/sh-p-n/oaulYtand6ujt6w.html at 10:15 I guess he did it to prove a point that since you have saved so much time with planning ahead of your cooking you can wash up. I imagine they have a real sink somewhere in the studio and those dishes he “washed” will be properly scrubbed and rinsed and dried after the videoshoot.

For people who are freaking out about the hand washing in the soapy water without rinsing, it's extended contact with the soapy water that actually kills bacteria (lyses the cell membrane of the bacteria) not the rinsing or scrubbing, so it should be fine, and then he wiped off on his chef-y towel. He can do that several times while cooking, and then do a thorough wash and rinse later. I'm Canadian, btw. And I wash dishes by scrubbing them all with a brush, and then quickly rinsing them off and setting them in a rack to dry. I have a double sink, but I do all that in just one side (and have the dry rack in the other). The UK way doesn't bother me, as long as there is enough soap in the soapy water, it should kill all the bacteria too.

you can still use a cast iron pan if you have it heating up on a hob while you make what goes in the oven. By the time it goes in the oven the pan should be ready for the chicken, so move it to a front burner and go for it.

Or you can use it cold when you have a modern induction cooktop: it heats a pan up so quickly you can turn it on, turn around to rub your spices on the chicken and those 10 seconds will do fine to have the pan piping hot.

Why on earth would you ever use an oven to make biriyani.? You cloud cool it faster without it, and it would be more authentic. Edit: Also, biriyani is a One pot dish.. I know this is supposed to be a hack. But why would you do all that when you could make an authentic biriyani almost at the same pace
