    I’ve done this with orange juice and set them in champagne jelly. It’s fun when your attempting to be fancy, but it’s a wait of time.

    One of the big complaints is they loose so much color, but couldn't you just add a food coloring to make it brighter and keep the flavor?

    There is no reason for the gadget, using the same mixtures and just dropping the stuff into the bowl with the calcium has the same effect

    You don't need a special fancy tool to do this... A syringe, eye dropper, pipette etc. Totes unnecessary

    I just think that if you want to make small balls out of fruit juice, then put some sheet gelatine in it put it in a bottle and then in some oil that's been in the freezer 3-4 hours.

    What if you tried reducing the blood orange juice with sugar and make a very concentrated syrup and try to make spheres with that? they might be more flavourful... Will the sugar help with the ph of the syrup so that you can avoid using the sodium citrate? :)

    I'd say that the loss of color isn't as big of a deal here simply because the "spherification" process is already quite artificial...so, why not just add a touch of red food coloring to your blood orange juice to counteract the sodium citrate's color muting effect? Another thought is about anthocyanins and their "indicator dye" status (meaning that they change color according to ph)...you could have some fun with multicolor pearls that are all made with the same ingredient (like red cabbage juice or blueberry juice), but at slightly variable acidities...as long as the tolerance of the alginate isn't such that there would be no visual distinction.

    You have done several things wrong. First of all if you are going to add water it needs to be distilled. Regular water has disolved solids. Which can thicken mixture when added to sodium alginate, and make it hard to pass through machine. Also you should juice the chives through a slow masticating juicer for no loss of flavor. Also when you drop the balls you should gently stir the water bath and rotate the sphericator in a circular motion. Also bigger bowl and you are "cooking to long before rinsing. They will continue gelling if you don't and become solid. It takes lots of practice. rinse immediately to stop the gelling process. Need to be used as soon as possible otherwise the chemical reaction will keep working towards the center until it is completely solid. Also all chemicals and liquids should be measured in weight. Eying stuff is going to be the reason it doesn't work perfectly. It is a science!!!

    You're supposed to wash the pearls in water, after their setting bath. It makes them more glossy and pearl-like. Don't know if Calcium chloride is safe to eat.

    I will say I think it depends on how good you are... I have a friend who is a mixologist and his cucumber balls float and play beautifully in the glass and taste like you are biting into a cucumber!

    For the blood orange. How about adding a red/orange food colouring dye after the mixture has been sitting for the 30ish mins. It would give you the color.

    Would you rather have the nicely chopped chives on your salmon, or the balls? Would you rather have a nice drizzle of good balsamic on your salad tomatoes, or the balls? Would you rather have a nice peel of cucumber garnish in your G&T, or the balls? Would you rather have a segment of blood orange (or finger lime!), or the balls? Would you rather spend £90 for an electric drippy machine, or simply use a plastic bottle for more control? ... you decide? It's a fail for me.

    You can do the same thing with a pipette or squeeze bottle. It's a completely pointless machine. Edit: ah I see you tried that. Also you need to transfer them into cold water after a couple of seconds to stop the reaction. You probably left them in too long.
