    I made the bao one, It' s seriously delicious but I added a pinch of salt and a pinch of sugar to the mix from what it tasted like I'm afraid it'd be very bland without it

    The “bao” looks like another Chinese food called a rou jiamo (pronounced a bit like Roger Moore). It’s a common street food in China. Stewed pork, spicy green pepper in a roasted jiamo. You can put a boiled egg and cilantro in too. It’s basically a perfect lunch. I’d love to see Ben’s take on it.

    It looks similar, as in the way you’ve presented it. The bao you made is obviously soft and the meat is different. Usually baozi would be closed, not open.

    I have to admit that I do love - no, adore - a good bao bun. We've been using kits, but I really would love a good homemade bao bun recipe that gets the kind of lovely fluffy baos that the kits create.

    Oh stop it.. with the "bread was made.." bullshit you are using baking powder.. it's a cake.. self raising flower, it's a CAKE lol Soda bread? It's A CAKE lol It's okay, but damnit.. if it has baking powder or soda in t it is cake! lol Sugar doesn't matter it is cake! lol I am not a fan of bakers yeast, but you CAN make it sour if you put a tiny bit in and leave the dough in the fridge for 5 days. Not the taste profile of your usual sour dough.. but then again.. making a sour dough is a HIT AND MISS.. You can end up with a base that might work great for farts but doesn't have much taste.And for the last thing, I know you will make a lovely way to use your leftover dour dough after feeding it. Oh sexy times, your sour dough starter has a lovely consistency. My dad always wants sour dough, for dense rye bread. So I give him and use myself. the rest stays.

    I like your videos, they're really killing my boredom (thanks guys for making it comical) .. But I've question and very deep one , that why u guys drink that much drinks(alcohol, beer, etc...) Cuz the science says those who are not happy with their life or the runaway from the situation makes people to drink them.. hope that's not the situation with u guys...     I was really eager to try the bao bun recipe and today I gat round to it. I steamed them in mu steamoven which worked perfectly. For the filling I marinated porkchop pieces in some bottled woksauces and then put them with the sauce into a sous-vide for an hour at 60°C. Just added some springonion and they where delicious. Next time we will als put in something picked which will balance out some of the wseetnes fromt the stock sauces.

    Ben as a well traveled person and a professional chef you should really stop referring to naan as naan bread. Naan means bread so calling it naan bread translates to calling it bread bread and just sounds silly.

    I've been baking sourdough for about a year now. I have my schedule tight so I either can make a discard recipe or a bread recipe once a week because I keep it in the fridge. To be honest, I use more discard recipes than I do actual bread! Last week I made biscuits and waffles!

    Hi guys I tried the bao recipe and unfortunately they didn't work for me at all they were very dense and tasted bad. I followed the video exactly and even tried steaming them for longer(i'm using a metal steamer) The only thing i can think of is should i have used self raising flour for the dusting of my hands and the work surface rather than plain flour? I was using vegetable oil does the type of oil matter? Any help would be much appreciated as I don't want all this dough i haven't steamed yet to go to waste. thanks :)

    Id love to see a basic run through of doughs because i struggle to find recipes that work and i often have limited ingredients and maybe a sun dried tomato, onion and herb bread, I adore Italian flavours.

    Baker here. The ratio of water (% hydration) varies quite a lot. Flour is hydrophilic. The conditions during harvest, processing and storing, the cultivar of wheat, time of year, how fine the flour is, etc all change the amount of water in the flour even before you add it. Dry cold winter and hot moist summer can easily be a 10% difference in the water needed. Also, please ditch the whole idea of discard. This is based on the cultlike sourdough communities online who think you should feed in a 1:1:1 ratio (by weight one part flour, one part water and one part starter). But that last part starter is absolutely ridiculous. In my bakery I sometimes only have some bits of starter left and add 4kg of water and 4kg of flour to have enough starter for the next day. And sometimes I only feed it 500 grams on an existing batch of 3 kilos just because I won't have enough the next day. Feed what you need, try to feed it ones every 2 weeks at least and just use a bit more when you have to much. It's bacteria they don't care all that much about hocus pocus.

    Hi All, I tend to batch cook stews, lasagna etc portion it out and freeze if for work lunches. Do you have any good 'summer recipes that I can batch cook and freeze? I have been making salad type stuff which I cant freeze and I am-bored of eating the same dish nearly every day until I get through it. I am also veggie so any meatless recipes are appreciated

    Felt the need to make chocolate chip cookies (no sourdough discard though). Also felt pressured to refrigerate half the dough because apparently, "I don't need that much cookie dough." Still ended up with more than 2 dozen cookies so I think Ben did me a favor.

    Sourdough starter discard are great for making cookies! You should try making it info muffins too! They made the base sooo fluffy for the muffins!!

    Add a bit of vinegar to your steam water for the buns next time. It will keep it white instead of yellowish.

    Guys, you don't have to discard your sourdough! You can still feed your sourdough and always leave some some discard and then feed it again. Our local baker has a sourdough that is 130 years old. The older the sourdough the better it gets! Also, for home baking, dry your sourdough in the oven at a very low heat and crumble it. Your now have a sourdough that you can just rehydrate and it lasts for around 1 year!

    I got a cookbook idea for you guys. How about Faith, Family, and the Feast cookbook by Kent Rollins? It's got a lot of awesome recipes including stories behind some of them. Or how about another video with Jaime doing more BBQ? He could show what improvements he's done to his brisket or BBQ something else.
