    Tbf if you ordered the same curry’s from another restaurant chances are they will be completely different anyway. So I don’t believe any of them are a fail

    One of my favourite things to do when I order a curry is to add a load of the chips into a bowl and then pour generous helpings of mango chutney and mint sauce over the top, then simply toss to coat. Bloody delicious I'm telling you.

    Put cooked apples into the curry sauce along with the tomato. Adds body and natural sweetness. Not sure if it's traditional, but it works for me!

    I've spent a few years making curries now, and I find that making the garam masala (I used Chef Harpal Singhs instructions, on you tube) makes a massive difference to every dish you use it in, half a teaspoon in the last 5 minutes of cooking for tikka masala and others really tips the balance, also the smell of a fresh batch of garam is something special to leave in your kitchen :-) As with all things, all those ingredients to make the masala need to be as fresh as they can be.... for dried ingredients you toast! :-) I guess that's easier in a restaurant.

    I don't envy our Ginger Chef. Curries are like brewing magical potions. All those spices and each one needs to be added with the right timing and the right heat and the right order. Respect to anyone who can just casually whip a curry up. @.@ I wouldn't be surprised if the secret ingredient to an obscure curry was spanking a goat over a bucket of ghee during a full moon. XD Meanwhile, my family's Japanese curry is an entirely different dish. Literally chop some veg and beef into some Vermont Curry blocks. XD

    James passed both tests. The butter chicken should have been not as runny, used bone in dark meat chicken that could have been baked first like the boneless tikka pieces.Then finished in the sauce and used actual butter instead of ghee, a dash of honey and you have awesome butter chicken.

    Don't know about Indian but it's so so so far off from how we make Bengali curries, regardless, James' look wayyyyy better, takeaway curries are nothing like home cooking :)

    The most successful curry dishes I've made at home have been using pre made, but authentic, spice packets. Usually from Taste of India or Patak's Kitchen. My apartment complex has a significant population of Indian people, have been informed on more than one occasion that buying a butter chicken or korma pre made mix what they do.

    Im surprised ur butter chickens there dont have charred chicken before adding it to the curry. The stuff here is like the leftover chicken tikka added to the curry Edit: context is im from singapore and comparing the curries with the ones I get in little india

    Indian here. I think the butter chicken James made is more or less spot on to how we make it back home. The takeway version here in the UK is sweet which is NOT how butter chicken should taste like. And the fact you didn't make it taste sweet makes me so happy!

    James u did a good job. Being an India i can tell you this that the curries which is served in Western World Indian Takeaways are a lot on sweet side but in India it isn't. And that's the originality of it.

    Disappointed for the first time ever. Butter chicken does not have cashews. That chicken korma. Fundamentally different. Seems like the 'taster' takeaway you got sent at the start was labelled wrong.

    Chicken Tikka Masala POSSIBLY originated in a restaurant in Glasgow, Scotland. This version recounts how a British Pakistani chef, Ali Ahmed Aslam, proprietor of the Shish Mahal restaurant in the west end of Glasgow, invented chicken tikka masala by improvising a sauce made from yogurt, cream, and spices. In 2013, his son Asif Ali told the story of its invention in 1971 to the BBC's Hairy Bikers TV cookery programme: On a typical dark, wet Glasgow night, a bus driver coming off shift came in and ordered a chicken curry. He sent it back to the waiter saying it's dry. At the time, Dad had an ulcer and was enjoying a plate of tomato soup. So he said why not put some tomato soup into the curry with some spices. They sent it back to the table and the bus driver absolutely loved it. He and his friends came back again and again and we put it on the menu. maybe contact the Shish Mahal restaurant and the hairy bikers ?

    A bit of unpopular opinion, but it's very difficult to mimic takeaway dishes at home only because most probably they add a lot of preservatives. James tried his very best to recreate the dishes and he doesn't have to be sad that the tikka masala is not good (though I think for next time he could have done Madhur Jaffrey's tikka masala and compare it to the takeaway one). I really liked that Currie recreated curries!!!

    Strange, in the UK I never came across butter chicken but it’s big over here in Canada and it’s so sweet. Wish they would use thighs too. Should look at The Curry Guy he recreates british indian restaurant curries.

    I love how James has this reasonable portions of curry plated and then Barry just piles up his plate with enough curry to feed his whole family and proceeds to eat it. A graphic chef vs normal representation.

    This is a slightly different way of making curries, pastes etc. It was almost there with technique but just a bit different. However, as long as it's yummy and has depth of flavour than who cares. Yum 😁

    The butter chicken is missing sugar and vinegar. Plus I think after blending it you're supposed to strain it so that it's super smooth. Oh! And more butter.. It is butter chicken after all. 😉

I use his recipes all the time and he hasn't let me down yet. Another great BIR chef is Dan Toombs (The Curry Guy) his recipes are better for larger portions and his chicken korma was indistinguishable from my local award winning takeaway.

    Im gonna be honest, i would be disgusted if my tikka or buttered curry were more like chunky soup. I prefer my curry to have more ingrediants and to have a lot more heat Edit: tikka should be orangish, not red and not sweet >:( Edit 2: james creations look so much better then the resturants

    Wow British butter chicken is so yellow... Here in New Zealand, takeaway butter chicken is almost as red as the tikka masala; I wonder if it has anything to do with being closer to authentic recipes, or just different mass production methods? Or maybe just camera shenanigans lol
