    Would love to see how Worcester sauce can be used to make all sorts of other sauces, glazes, and marinades.. I use it on almost everything, mixing with mustard and honey for a ham dish, or with tomato sauce and herbs for a type of bq sauce.... Just would enjoy these guy's take on it...:)

    Pro Vegan tip - when creating meat substitute, add something that is great at holding moisture. One of the best things I have found is pumpkin puree. It sounds odd, but this results in the juiciest and least spongie meat alternative. Example: Astro Eater Veganized Country Fried Steak

    Whether or not the seitan will benefit from sitting in the yogurt longer depends on your goal. Infusing the flavour? Yes. Tenderizing no, doesn't work that way

    Actually it does helps vegan nuggets/seitan to be marinated longer in eg. Honey, to break down protein an make it more tender :) tested it several times👏🏻

    Ben refusing to even taste fast food (at least twice now, when it's a requirement to recreate it) seems really pompous and closed minded... not great qualities for a chef. You can't use your palette to try to recreate something if you refuse to even taste it. I think maybe it'd be best if James did these recreation videos rather than Ben given the current state of things.

    This is all a little too precious for it’s own good. Ebbers once again refusing to eat a silly 🥪, a bite won’t kill him or make him less of a chef for goodness sake. Anyway, combined with turning a perfectly good sandwich 🌱...what did that poor sandwich ever do to deserve such insult. Perhaps I’m a little sensitive as restaurant gm but man I’m so sick of dealing with everybody’s allergies (imagined ones anyway), vegan, vegetarian, gluten free, paleo, south beach...we have lost our collective minds in indulgent, multiple choice, over sharing narcissism. I’ll happily be the last remaining person on earth eating the full fat, real meat, salted butter made the same way we did in generations past - taste, only thing that should matter. Love these guys tho, fun to watch

    I think we need some new head to head to head battles, seems like the lads have learned a fair bit since the last ones. As for themes; most pretentious dish? Best cafe lunch? Most hipster recipe? Environmentally sustainable ultimate battle? Most expensive recipe? Exotic food? Modern fine dining? Pack lunch battle? I miss the battles and the banter, and sure I’m not the only one.

    Y'all probably know this by now, but 1. knead the seitan dough and rest it for atleast 30 mins, it makes the seitan dough more fibery. 2. If you are gonna boil it then either use a broth at least salt water, as the water will dilute whatever flavor you put in the seitan to some extent. 3. Steam it having lightly wrapped in wax paper (don't wrap it too tight as it might tear through) for a chewier, stringier texture. 4. You can sous vide the dough with some coconut oil at 170-175 F for 5 hours and rest it in the fridge, the result would be similar to a cold cut, with pockets of fat interspersed within the seitan !!!! 5. Rest your cooked seitan for about 15-30 mins, makes it less bready and more "textury"

    I tried they Mayonnaise recipe like instructed on the linked page, I'm not an expert and it is possible I did something wrong, but I honestly feel like 220ml of oil is wrong. Because I did everything like. And it didn't turn into stiff mayonnaise. Was that really just my error or is something wrongin the recipe. Because it also doesn't look like youguys used 220ml of vegetableoil in your recipe.

    @SORTEDfood Deep fried its bitterness is reduced by the fat. Salt the raw vegetable and then stuff or saute it in spices for a tasty side dish. In east Asia they wait until it is ripe and red and eat it as a bitter sweet treat raw. The seeds are cruchy and delicious always.

    Quick tip if you're vegan or if you ran out of eggs : you can make "mayo" without the aquafaba. Mustard and oil emulsify easily if you use a hand mixer. Bon appétit !

    I would love to see you guys do a similar video where you do the recreation both diary- and gluten-free. I've had to give up both dairy and gluten while breastfeeding and would love some more recipe ideas since eating like this is TOUGH! Thoroughly enjoyed this video and how you guys always approach new things with such genuine excitement and thoughtfulness.

    Love this video! The only question I have is: could it be improved by building it upside down and then plating it right side up? It seems like the weight of the seitan patty would compress the vegan mayo and “crispy” iceberg lettuce. But if you build it the same way onto the top bun, and then flip it for the plating, you might help preserve some of the “freshness” of the lettuce/vegan mayo combo... Curious about your thoughts. My food knowledge is far too limited, I’m afraid...

    I really like you're exploring this field! I've been experimenting with homemade seitan lately as well but I've not made any chicken-like patties yet.     One thing I don't understand about the whole vegan/vegetarian concept is the desire to have meatless food items look and taste like real meat. As a "non-vegan", it makes absolutely no sense.
