Ben shows us how to make delicious, chewy, pizza dough using two techniques - a same day method and an overnight prove all WITHOUT the need for a recipe!! And don’t worry, Mike is on hand to make sure Ebbers doesn’t get too cheffy!

    Do 1/3 of the dough a day before, leave at room temperature. Mix in the dough on the day - adds extra flavour to the dough. Use cast-iron skillet for even greater heat. Get a nicer crust and better flavour. I'd also recommend using a precise amount of salt 2.5-3% for better flavour. Make sure to use a good Italian olive oil or greek one for more sweetness.

    So two things. I live in a small town in Alberta, Canada. We had a great pizza place that closed about a month before Christmas of 2019, No idea why they closed I am still very upset about this. And second the ad I got in this video was for a Pizza Hut original crust pizza, I thought that was hilarious!

    Looks amazing even on my 3rd or 4th watch, as for how I'd have done it, same cheeses, but ham (or pepperoni, but I get heartburn,) black olives and mushrooms.

    I think we need some new head to head to head battles, seems like the lads have learned a fair bit since the last ones. As for themes; most pretentious dish? Best cafe lunch? Most hipster recipe? Environmentally sustainable ultimate battle? Most expensive recipe? Exotic food? Modern fine dining? Pack lunch battle? I miss the battles and the banter, and sure I’m not the only one.

    Hey Sorted, love these friday videos! If I was going to use a pan that isn't non-stick would I need to oil it first? I dont have a non-stick frying pan that can under the grill

    I made this today, having left overnight (18 hours) in fridge....superb ! I've tried loads of pizza dough recipes, given to me by chefs in restaurants using wood fired ovens, to famous CNbothrs...most were just plain awful. This recipe creates a wonderfully light pizza base...puffy and light around the edges...lovely chew and flavour.... Thanks guys...much appreciated ! 👍

    I would have brushed the crust sides with garlic flavour butter oil before keeping it in the grill!!! Punch of flavours inside your mouth right there and it will also help with the dryness of the crust :D Its melted butter + bit of oil + Pizza oregano or any of the italian seasonings! It will taste heavenly :D :D

    So i made this last night and it was amazing! except the dough was a bit chewy instead of crunchy. Was the dough too thick ? or did I leave it in the fridge too long? Not enough time in the pan? Anyone else have this experience?

    Fitting this was posted on 9/11 considering how much of a disaster it looks. If you watch to the end you can see the crumb and that's def not a proper Neo, Roma, or Neo-American aka NYC crust. It's not even a proper Chicago, Detriot, Seoul, or Cali style either. If that's what you all call pizza in the UK I feel even more sorry for you lot.

    If time is not a matter, I'd say leave the dough in the fridge even longer. 3 days will give you an excellent result.

    This is far and away the best homemade pizza I’ve made. I would venture to say that it rivals pizza that I’ve made in a professional kitchen in a deck oven. I made one traditional sausage pizza and one with veggies and vegan cheese and both were equally successful. I used a heavy cast iron skillet and was really pleased with the crispy crust.

    Can you do this in a “gluten free” version? Like a recipe for dough that makes a pizza most similar to normal pizza?

    Can you guys say the exact protein percentage when ever you use flour please? It really helps as a reference. And personally, I find at least 70% water with 11.5% (which isn’t that strong, it’s more like a stronger all purpose flour), about a third of a UK satchel yeast, overnight at room temp is enough. The end result is so airy, there’s basically no solid dough left. Problem with this method is the dough end up so easy to stretch, I often end up making paper thin films of dough in the centre by accident, Next time I will try the fridge method and see if it makes a difference

    I've made pizza the same way, but instead of using a frying pan, I used a thick baking sheet on the hob, bit more dangerous but saves getting the really big crusts but I'm sure it's all down to preference

    I'm planning a pizza party tomorrow for 4, so we'll be making (at least) 4 pizzas to go around. Roughly how many pizzas worth of dough would the amount (500g flour 300ml water) make? It looks like 2 or 3 pizzas worth but then I'm also gonna be using my cast iron pan which is a little wider. I'm thinking maybe multiplying the quantities by 50%? Any advice for anyone else who's followed this recipe?

    Hey Charles... where's our invite? This amount makes 4 pizzas about the size we did, maybe a fraction smaller. So yeah, if you're making a batch anyway and have a slightly bigger pan, then increase a little. Whatever you go for... divide the weight of flour by 5, multiple it by 3 and that'll give you the water! Easy ratios! Enjoy!

    My father uses a heavy cast iron pancake griddle. Provides the heat to the base and also keeps the pizza flat. Works even with store bought pizza.

    I used the cooking method today, using my own dough recipe...which is close to this. The toppings I used were homemade Donor kebab meat, onion, mushrooms, and of course mozzarella. It was the best pizza I've ever made. That you very very much for this cooking method. Now I can have my homemade pizza quicker, easier, and more delicious than I was previously doing, which was in the oven on a baking sheet.

    One thing I've done with my dough is to cut out the white sugar, and use brown sugar instead. You still feed the yeasties, but you also get a slightly deeper flavour. If you're just baking it without the heated pan first, it also gets a bit darker than it would otherwise, so closer to what you get WITH the heated pan...

    I dont understand why 110 people disliked this. Do they just not like pizza or what. This is meant to be a quick, super easy recipe, not something super cheffy, something anyone can make at home and I think it fits the bill admirably.     My mother has a similar recipe, but she always taught me to brush the dough with a mix of butter/garlic/oregano before you add anything. Gives it kind of a garlic bread taste.

    This video is class. Ben/James - does this dough still work for pizza ovens? We've been experimenting all summer on getting the dough right, it's been delicious but inconsistent (and tbh usually feels too hydrated)

    with october closing in more and more, id like you guys to try yourself at a North German Speciality so people stop ascociating Germany weith nothing but Bavaria. the Dish in my mind is "Grünkohl mit Pinkel" which is Kale,Potatos, a Pork cut called "Kassler", and a very gritty Juicy sausage called "Pinkel". non-northern germans will claim "mettwurst" is ok too as chocie of sausage, but those people dont know what "Pinkel" is. (also dont get confused by the Sausage name, sinc eits very close to a german word for "having a wee" the "pinkel" is a seasonal Sausage ussualy only avalible in the north western areas of Germany (east Frisia, Bremen, Oldenburg etc) during late September through October. so if you want to give it a go, you have to make preperations now. alternatively, i'd like to see you guys having a go at "Labskaus" which is a northern germanic (not german, Germanic, so northern germany, denmark, sweden etc) comonly served by and for Sailors since it covers everything the body needs in harsh cold days on the Sea. its Red Beet, Cornedbeef, Potatos, a special picklled Herring called "ollmops" which you can make during/before the video yourself. sunny side up Egg, Pickles and MUST be served with a Beer (sailor habit, dont know about landlubbers) Both dishes that are easy to do but hard to get right.
