I think we need some new head to head to head battles, seems like the lads have learned a fair bit since the last ones. As for themes; most pretentious dish? Best cafe lunch? Most hipster recipe? Environmentally sustainable ultimate battle? Most expensive recipe? Exotic food? Modern fine dining? Pack lunch battle? I miss the battles and the banter, and sure I’m not the only one.

To get bigger and softer pancake i usually do a thicker batter, with stiff peaks egg white .If i am using 1 egg for the batter, i use the egg white from the egg i use plus another part of egg white . So i do 1,5 part white egg for every egg i use. Sorry for bad english

Here in Brazil we call crepes pancakes hahaha crepes are a totally different thing made with the same batter hahaha. I like my crepes savory, so usually a make them filled ground beef and tomato sauce or shredded chicken breasts with spinach and ricotta cheese. And instead of folding them like the French style we roll them like a cannoli and put them in a baking pan with a little bit of tomato sauce on top and Parmesan cheese. What I also like to do is add things to my batter, like spinach or carrots, it doesn’t change the flavor but it makes colorful and more nutritious I guess, you guys should try it.

I use a modified version of Japanese pancakes that are crazy fluffy. In a small frying pan on a lower heat, fill pan with enough batter to cover all the bottom generously, with it starting to go up the sides. Put on a lid, and don't flip until middle is a little underdone, cooking with the lid off until other side is done. Only need one pancake though cause it is a lot of food 😂. Oh, also almond extract and a little dash of cinnamon in the batter goes a long way.

with october closing in more and more, id like you guys to try yourself at a North German Speciality so people stop ascociating Germany weith nothing but Bavaria. the Dish in my mind is "Grünkohl mit Pinkel" which is Kale,Potatos, a Pork cut called "Kassler", and a very gritty Juicy sausage called "Pinkel". non-northern germans will claim "mettwurst" is ok too as chocie of sausage, but those people dont know what "Pinkel" is. (also dont get confused by the Sausage name, sinc eits very close to a german word for "having a wee" the "pinkel" is a seasonal Sausage ussualy only avalible in the north western areas of Germany (east Frisia, Bremen, Oldenburg etc) during late September through October. so if you want to give it a go, you have to make preperations now. alternatively, i'd like to see you guys having a go at "Labskaus" which is a northern germanic (not german, Germanic, so northern germany, denmark, sweden etc) comonly served by and for Sailors since it covers everything the body needs in harsh cold days on the Sea. its Red Beet, Cornedbeef, Potatos, a special picklled Herring called "ollmops" which you can make during/before the video yourself. sunny side up Egg, Pickles and MUST be served with a Beer (sailor habit, dont know about landlubbers) Both dishes that are easy to do but hard to get right.

I did have a question on the 1:1:1 of the pancakes. You put the yolk in the container on the scale and then said to add equal parts milk to it. Did you reset the scale with just the yolks in before adding the milk or did you add the yolk and milk as a combined weight?

Tried both recipes. The idea with the proportion is super convenient, and the pancakes/crepes turned out fine. Although... Maybe you guys are using some special kind of eggs, but in my case the mixture (and by extension, the pancakes/crepes) is too eggy. Definitely needs a bit more milk and flour, than just 1:1:1 or 1:1:0.5

Dutch pancakes are a little bit different. No baking powder, less eggs and thicker pancakes, but in diameter the same as a french crepe. (500 g wheat flower, 1l milk, 2 eggs). We eat 3 or 4 of those for dinner with f.e. cheese melted in and stroop, a thick sugar sirup!! And have you ever tried Poffertjes, a dutch delicacy and a batter with beer or yeast and half wheat- and half buckwheat flower in it. They look like little puffed pancakes. Served with a lot of powdered sugar and butter. Soooo yummie!!!! Another pancake related recipe my grandmother taught me are rice-pancakes with some leftover rice spooned through a regular (dutch) pancake batter, and bake 3 in a frying pan so about 10 cm each. Serve with a nice homemade jam or some cinnamon sugar on top. Also a savory version have been made here, but those were my own inventions, with leeks, bacon and grated cheese. Great for brunch. Having said that, I loved to see the English version. So similar but yet so different. Thnx for another enjoyed video. X
